These little cookies are a great spring project to make with kids, and would make a fun Mother’s Day surprise as well. The dough goes together in minutes!

Spring Cookies, Makes about 30

1 c. butter

2/3 c. sugar

1 egg

1 t. vanilla

3 T. cocoa

2 c. + 2 T. all-purpose flour

8 oz. chocolate couverture

Chocolate eggs, coconut, jelly beans for decorating

Preheat the oven to 325. Cream the butter with the sugar, then beat in the egg and vanilla well, followed by the cocoa and flour. You should have a soft, moldable shortbread dough.

Grease two cookie sheets and drop tablespoons of dough onto them. Shape each cookie into a little nest shape, like so.

Bake for about 15 minutes.

Some of the cookies might flatten out a little, but that’s okay! Put a couverture coin in each cookie. I used pink so it’s easy to see, but you can use any color or flavor you like.

When the chocolate is soft sprinkle it with coconut and press a few eggs into each nest. Let the chocolate harden before serving.
