So we’ve got the homemade buns, but what’s that yummy burger? I bought some lamb Moroccan sausage at Whole Foods and I ended up making it into these burgers. You could use ground lamb too.
Lamb Burgers, Serves Six
Three lamb sausages or 1/2 lb. ground lamb
1/2 lb. ground turkey
1 T. minced garlic
1 t. Zatar oregano seasoning (or other seasoning of your choice)
1 t. ground coriander
2 red peppers, washed and sliced
1/2 onion, sliced
1 small log fresh goat cheese
Heat up an electric skillet or frying pan with 2 T. olive oil. Add the peppers and onion, cook until soft.
While the peppers are cooking, mix the meat well with the seasonings.
Take the peppers and onion out of the pan set aside. Form the meat into six patties and add them to the pan.
Cook for 2-3 minutes or until browned, flip and brown the other side.
Cover and cook until they are no longer pink in the middle. Split the buns and spread the upside down tops with goat cheese. Then add a layer of peppers and onions.
Put a burger on top of each and cover it with the bottom of the bun, so the entire burger is upside down.
Then, holding it tightly, flip it right side up. This helps you build it without all the goodies sliding off!
These are a nice change of pace from cheeseburgers. Hang on until Saturday – there will be cake!
