Chorizo Burgers

These are based on a recipe my hubby found in Men’s Health magazine, putting them in taco shells was my idea. The chorizo gives them a little kick and the turkey burger helps cut the heaviness of the sausage. Tucking in a few avocado slices tossed with lime juice livens things up too.

Chorizo is a Mexican sausage that comes in spicy or very spicy. You’ll probably find it in the cooler with the breakfast sausage in your grocery. It comes with two narrow tubes to a package. You’ll only need half the package for this recipe.

Chorizo Burgers, Makes Six

One package 99% lean turkey

1 c. chorizo sausage

2 T. ketchup

2 t. oregano

1/2 c. sliced onion

One avocado, sliced and tossed with lime juice

Combine the meats, ketchup and oregano in a bowl. Mix thoroughly and form into six burgers – indenting the middle of each one.

Heat 2 T. of olive oil in a skillet. Add the onion slices and cook until they are translucent, remove them and add the burgers.

Cook until brown on the first side, then turn and brown the other side.

When you’ve browned both sides cover and turn the heat down to medium until the burgers are cooked through.

Top with sharp cheddar cheese and cover to melt the cheese. Cut the burgers in half and slide them into white corn tortilla shells. Garnish with the sauteed onions and avocado slices.
