It seems kind of silly to give a recipe for these because they are so simple. But the fact is, my kids would be happy if I just made these and skipped all the other more elaborate cookies. The fact that they are so simple makes them a great starter recipe for young cooks. They are prettier with the colored marshmallows, and I would use those if I could find them colored but not flavored.
1 stick of butter
1 package chocolate chips
1 bag of miniature marshmallows (plain or colored)
1 c. walnuts or pecans, optional
Coconut for dusting, if desired
Melt the butter and stir in the chips until smooth. Let cool slightly and mix the marshmallows and nuts in well. Shape into two logs sheets of aluminum foil. Dust the tops with shredded coconut if you’re using it.
Refrigerate until solid. To serve slice each log into pieces about 1/4″ thick.
