Brownies

Get ready my dessert-loving readers – we are about to kick off a December Bake-a-Thon! I’m working on a few surprise guests, but suffice to say, by the time the holidays are here we will be awash in buttery deliciousness. To celebrate, and fortify you for the work that’s ahead, here’s one of my favorite quick recipes. It came from one of those free cards you get in the mail sometimes, called Great American Home Baking. I know, brownie recipes are a dime a dozen online, but this one is lower in butter and sugar than most. And did I say it’s easy?

Easy Brownies

3/4 c. unbleached all-purpose flour
1/4 t. baking soda
3/4 c. sugar
1/3 c. butter
2 T. water
1 pkg. semisweet chocolate chips
1 t. vanilla
2 eggs
1/2 c. chopped pecans, optional

Bring the water, sugar and butter to a boil and remove from heat.

Whisk in all but one cup of the chocolate chips. Let cool.

Beat in the eggs, one at a time, then the vanilla.

Beat in the dry ingredients and pour into a greased 8″ baking pan (9″ if you like your brownies a little thinner).


Bake at 325 for 35 minutes. Let cool completely before cutting.
