Italian Chicken Hoagies

I know, awesome title. Girl’s got game what can I say? Anyway, I threw these together last weekend when I found some peppers languishing in the veggie drawer. Just look at those Italian flag colors – gorgeous!

Italian Chicken Hoagies (Makes four)

2 c. diced chicken (you can use leftover roast chicken) or grilled chicken like I have here

1 red pepper, cleaned and sliced in strips

1 green pepper, clean and sliced in strips

1/2 onion, sliced in strips

1/3 c. Italian dressing

8 slices of mozzarella cheese

Four hoagie rolls

Saute the onions and peppers in pan with some olive oil.

When the veggies are al dente, add the chicken.

When everything is smokin’  hot, pour the dressing over and mix well.

Keep the pan warm while you cheese the buns.

Pile heaping spoonfuls of the chicken and veggies into the buns. You can pop them in the microwave for a minute to melt the cheese if need be.

If you have everything on hand you have these on the table in 10 minutes – for reals. It’s love, american style 🙂
