This beautiful hash can standalone as an entree or understudy as a side dish. If you run with vegetarians, as I do, just leave out the meat. It’s equally delicious.
Sweet Potato Hash (Six servings as a side dish)
Cut in large dice:
Two large sweet potatoes
One red bell pepper
1/2 c. onion
Cooked meat if desired
Barely cover the sweet potatoes with water and boil until just tender.
Drain and set aside. Saute the red pepper and onion in olive oil until they begin to soften.
Add the sweet potatoes and heat through.
If you’re using the meat, add it here. I’ve used leftover italian sausage, breakfast sausage and crispy smoked bacon. Season to taste with fresh cracked pepper, red cayenne pepper and cajun seasoning.
Just before serving I like to top the hash with some grated dry cheese like parmesan or romano.
